Avocado Chicken Salad

This healthy recipe requires only 5 ingredients. The rest are optional and up to you for taste! I got all the ingredients here from Trader Joe’s.

1/2 Avocado, mashed
1 12 oz. can Chicken Breast (or 12 ounces chopped Chicken)
1/2 cup Celery, finely chopped
1/4 cup Red Onion, finely Chopped
2 tbsp Nonfat Greek Yogurt

1 tsp Paprika
1 tsp Lemon Juice
Salt and Pepper to taste

Mix first 5 ingredients together in a bowl. Taste. If you have the remaining ingredients feel free to experiment by adding a little at a time or each. A little goes a long way so be stingy at first. This tastes great as a sandwich filler with some greens and whole grain bread, as a dip with crackers for an appetizer or pile a scoop onto a bed of lettuce for a yummy salad! Enjoy.
